    Yikes! This heat wave has the trees budding early. Yikes! This heat wave has the trees budding early. It’s always nice to see the trees come to life after the winter but this is scary early. There is still lots of potential for a killing frost in the next month even in our sweet little Beaver Valley microclimate. 

But spring does mean that our orchard-side bottle shop is open starting tomorrow. We’re suspending tastings for the time being but would love to welcome you to the property for a safe distanced visit so you can grab some bottles or fill your growlers and talk cider.

    It’s the last day of winter and our winter pruni It’s the last day of winter and our winter pruning is done. Time for our version of who did it best. 

Tree on the right was pruned by yours truly; tree on the left by our friendly neighborhood rabbits. They clearly use a more extreme cut back strategy than I do but it’s your call: Who did it best?

I have to admit, I am fond of “dry” cider. What is dryness? This is a tricky question. You can quantify dryness as a scale of how much sugar is in the liquid, usually listed as g/L. This is a great start, but doesn’t tell the full story. Tannins will make a cider taste drier than one without. To add to the confusion, acidity will also be described as dryness by many consumers and fruity flavours will be preferred in a bone dry cider even amongst people who say they don’t like dry cider. Never mind the debate in the industry about the above ☝️, my intention is to review and select my favourite dry ciders for you to try. Lower end of sugar contribution because, well, that’s what I like. Dry cider pairs better with food with the acidity, lower ABV and some tannins PLUS you can drink a glass (or two) without feeling like you had a sugar bomb. (NB I’m also a big fan of natural wines for the same reason). 

Soo, onto this week’s Cider of the Week, brought to you by @greyandgoldcider . They are a true harvest driven cidery, pressing local Grey County apples once a year at harvest and allowing the wild yeast to do their thing. They have won multiple awards for their cider & I think their Heritage Dry is delightful. 

The aroma strikes you first- very earthy with a touch of leather, which are more typical in a British West Country cider. However, these apples have no tannins, so the flavour profile is completely different. Pronounced earthy notes come through even more on the palette with a crisp lingering finish. It reminds me of the farmhouse style cider you might find in a country pub in Devon, but without the astringency and horsey notes, which are from the tannic cider apples. Score: 90

Pair with earthy soups or a roast chicken and root vegetable dinner. Great value for what is the bottle for 500ml & $8. Order online for home (fast!) delivery.

This year’s #petnat is a perfect blend of local Golden Russet and Northern Spy apples produced with wild fermentation and bottled in the Petillant Naturel style. Lovely deep, hazy gold colour. Bold, rustic, ripe apple nose. Ripe apple and peach notes on the palate with a bright orange peel zing in the finish. Light petillance plays with chalky minerality to create an intriguing mouthfeel. 99 cases produced. 7.4% ABV.

We’re super proud of this natural expression of heritage fruit and the terroir of the Beaver Valley. Thanks to @oaklaneorchards and Breadner Orchards for growing the fruit.
